As the farm to table movement continues to grow, YAKIMA Social Kitchen + Bar has taken it one step further. Executive chef Kai Cronsfoth, who relocated from St. Thomas the U.S Virgin Islands, has made it a priority to utilize local flavours. In a market where pre-packed, store bought ingredients have become the norm, chef Kai and his culinary team raise the bar to what fresh food ought to be. The entire culinary team is committed to using only the freshest, locally grown ingredients.
Chef’s Favourite Dish
One of chef Kai’s favorite dishes is a unique twist on a restaurant staple — the pulled elk sandwich.
This sandwich reflects his childhood memories and his passion for exploring new cultures and tastes. The elk is raised and cured near Canmore, Alberta and is braised in its own juices in the YAKIMA Social Kitchen + Bar’s open concept kitchen. Chef Kai’s grandmother believes a good meal resonates and it creates a memory.
For thousands of years, three simple ingredients have been the heart of all cured meats — meat, salt and time. Originally established as a means of preservation prior to the age of refrigeration, cured meats, also known as charcuterie, have become a historic art form, a true delicacy, and an essential component to any social gathering and charcuterie is on the menu at YAKIMA.
Stop in for a smoked old fashioned and house beef jerky, a nice addition to the charcuterie board. Taken from the “Small Bites” menu section, the in-house beef jerky, prepared by chef Kai, marinates in 30 spices for two hours and is roasted on low heat for seven hours. The result is a tender, healthy snack without preservatives. Sharing a passion for fine cured meats enhances the team’s desire to use local ingredients.
