Calgary Chefs: Charcut Roast House's John Jackson

Charcut Roast House's co-chef and co-owner talks about the strangest food he's eaten, the first dish he's made and more.

“The best thing I ate was the clams and chorizo at Una Pizza + Wine. It was a big pot of Manila clams and chorizo sausage. It's very rustic and nicely seasoned and not overcomplicated. It reminded me of [the] San Francisco style of cooking which just lets the ingredients shine.” —John Jackson co-chef and co-owner Charcut Roast House
