Charcut Roast House Grand Opening

It was the grand opening of Charcut Roast House last night and more than 200 guest turned out to sip, sample and mingle. It’s been a long time in the making for this restaurant at the base of Hotel Le Germain and the place didn’t disappoint. 

Trendy and sophisticated but with an easy laid-back rustic vibe, Charcut is a place where the menu features local, made-from-scratch and seasonally inspired dishes.  We tasted everything from brioche bites with warm Quebec Raclette cheese to roasted heirloom beets with house-made goat cheese and mint to the pig’s head Mortadella — hand-mixed pork with pistachio and truffle stuffed into yes, an actual pig’s head, then sliced super thin.

 

The dining room is equally impressive with its open kitchen and custom-built rotisserie and charbroiler, iron-chandelier with mason jars, and jars of pickles and veggies that line the charcuterie eating bar. High-back black banquette seating throughout gives a feeling of communal and intimate eating spots. There’s even a beer cellar and craft brews on tap and an onsite garden where much of the herbs used are grown fresh.

All the meat at Charcut is butchered and smoked inhouse.

Chef/owner John Jackson mentioned that the wood in the pillars are sourced from a 100-year old Alberta farm and that the hand-operated vintage-style slicer is another local find too.

With such a prime location and mouthwatering dishes that are perfect for sharing, we can’t wait to go back.  Especially in the warmer days, when the outdoor 30-seat patio right on Centre Street opens.
