4 Rabbit Dishes for Easter

Kids may associate the Easter Bunny with chocolate, but food aficionados think of rabbit in a more savoury way this time of year.

If you have a sense of humour, then you’ll know that eating rabbit around Easter is an especially delicious thing to do. Here are four dishes around Calgary that feature the relatively uncommon protein in interesting ways.

Bridgette Bar Rabbit Toast

Creamy rabbit rillette is thickly spread on pieces of grilled sourdough and topped with a pickled vegetable and parsley salad. It’s a beautifully simple and refreshing dish to start off a dinner at this buzz-worthy Beltline restaurant.

Deane House Rabbit Perogies

Perogies can be surprisingly hard to find in Calgary, so make a point of ordering these comforting little doughy pockets filled with potato and rabbit sausage and finished with tangy fermented carrot as well as a smooth buttermilk and carrot puree.

Chef Jamie Harling also offers a rabbit dish on the dinner menu. He sous vides the saddle (essentially the loin and back of the rabbit) and serves it with wild rice, hearty Pennybuns mushrooms and pickled mustard seeds.

Start your evening off at this award-winning restaurant with this chilled preparation of rabbit accented by a coriander vinaigrette, pickled blood orange, crushed pistachios, carrot, juniper and toasted brioche. And a glass of wine, of course.
