Zest for Summer

Gwendolyn Richards is quickly becoming Calgary’s resident expert on all things citrus. Her cookbook, aptly named Pucker: A Cookbook for Citrus Lovers, was published in 2014. Here are her tips on how to get your pucker on this summer.

Choose It

Bright yellow and green colours are not the only signs limes or lemons will be full of tangy juice. Look for firm fruits, heavy for their size, with smooth, unblemished skins. Those nubbly ones usually have more pith – the inedible, bitter part between the flavourful skin and flesh. Take a sniff too; a good citrus fruit will smell fragrant.

Drink It

The bright tang of citrus is refreshing in drinks on hot days and long evenings. Add a few slices of lemon or lime to sparkling water for some acidic zip, or make a pitcher of lemonade – adding just a pinch of salt to round out the taste – for something to sip on.

Eat It

Skip the potato salad for dinner out on the deck, serving up instead a salad with baby greens, fresh herbs and a lemon vinaigrette. Simply shake up one part lemon juice to two parts oil, along with a pinch or two of salt, some sugar or honey and freshly cracked pepper. (Taste for seasonings and adjust as needed.) Drizzle over a big bowl of greens and toss together just before serving.-Gwendolyn Richards
