Winner: Black Dog Bakery
Chelsea Radke, owner of Black Dog Bakery, brings more than 20 years of hospitality experience to her work creating showcase desserts. Radke graduated from SAIT’s pastry program in 2016, completing her Red Seal designation. Her unique wedding cakes play with textures and palettes, and are designed specifically for each couple. “I get to know my couples,” Radke says. “I’ll hear about what they want from their wedding day, and then, from there, build the design.” Her custom cake flavours include Earl Grey, “strawberry fields” and toasted coconut, though her signature flavour is salted caramel — a moist chocolate cake topped with caramel buttercream and caramel sauce salted with Vancouver Island Sea Salt.
