Changing Your Stripes

At The Tisto Factory, striped pierogies make an old tradition new again.

Many of the dishes gracing our tables today have been cherished for hundreds, if not thousands, of years. Their recipes are unique, passed down from generation to generation. Yet, despite the timeless tradition, there is always room for something new, extraordinary and a magical touch.

The Tisto Factory introduces a completely fresh perspective to the long-beloved Ukrainian pierogi. The Tisto Factory pierogies feature stripes in vibrant colours, and their fillings and flavours are as surprising as their colourful exteriors.

“The magic begins with a hands-on approach,” shares Anna Posikera, founder of The Tisto Factory. “Layers of vibrant dough are expertly rolled out, then transformed into intricate, striped marvels. Though demanding, the process ensures a masterpiece with every creation.”

Posikera and her family left their home in eastern Ukraine nearly two years ago, seeking refuge from the Russian invasion, and found solace in Canada. After settling in Calgary, she decided to introduce her family’s pierogies to new friends at a potluck. To say the guests were impressed would be an understatement. Guests savoured new-to-them pierogis, including one crowd pleaser, which would later become known as Captain Pickle — a purple and green dumpling packed with smoked brisket, baked potato and pickles, a flavour combination that no Canadian had ever experienced. That evening served as a catalyst, inspiring Posikera to embark on The Tisto Factory journey.

When asked about the inspiration behind these delectable creations, Posikera says, “I was looking for a creative solution to introduce more vegetables into my children’s diet. As parents, we’re all too familiar with the challenges of encouraging kids to eat healthier, and that’s where the concept of striped pierogies comes into play.”

Each of The Tisto Factory’s creations features the freshest ingredients, from Agent Spinach’s  blend of spinach, mozzarella and garlic to Blue Ninja’s medley of bell peppers, sun-dried tomatoes, olives and mozzarella. These mouthwatering delights have quickly become favourites among her growing fan base. But there’s not just savoury options on the menu. Try a dessert pierogi such as the Cherry on Top, a heavenly treat featuring Jameson Whiskey caramelised cherries, topped with a mascarpone and cottage cheese whip — the perfect ending to a memorable family meal.

So whether you’re looking to add some flair to your dinner or delight your guests with a mouthwatering game of pierogi roulette, The Tisto Factory’s pierogies are the perfect choice. Available at your local Calgary Co-op or order direct. For more information, visit the-tisto-factory.com
