With over 20 years of experience, Red Seal Chef Eugene Hicks is a welcome addition to Calgary’s Shoe & Canoe. Having worked at a winery, a yacht club and one of the top hotels in Kelowna, Hicks understands the importance of locally sourced ingredients when creating a stellar menu. “I like to use local products as much possible and use flavours from different countries to bring forth the ingredients that local producers grow,” says Hicks. With his experience serving up to 2,000 guests at once, Hicks is well-versed in delivering top-tier dining while maintaining speed and efficiency.
“We are extremely excited to bring Chef Eugene aboard,” says Richard Main, the General Manager at the Delta by Marriott, Calgary Downtown. “Shoe & Canoe was named after David Thompson and his love for exploration. Similarly, Chef Eugene possesses this passion when it comes to fresh ingredients, local vendors and new recipes.”
Since moving to Calgary, Hicks has enjoyed exploring and discovering all the amazing food elements the city has to offer. Now, he looks forward to finding a way to integrate his enthusiasm for South American cuisine with his admiration for fresh Albertan ingredients. Hicks finds inspiration from the words of Wolfgang Puck, “cooking is an expression of the land where you are and the culture of that place.”
Hicks and the Shoe & Canoe team can’t wait to showcase their refreshed menu. “You can expect to find a ton of locally grown ingredients, several unique farmer’s market finds and seasonal root vegetables for our fall. Just wait until you try his whipped feta dip enhanced with dukkha spice or his 200-degree salmon dinner topped with fennel tomato broth!
Shoe & Canoe’s new hours remain in effect; open seven days a week from 7 a.m. to 1 p.m. for brunch, 4 p.m. to 6 p.m. for happy hour and dinner from 4 p.m. to 10 p.m.
