Pancakes are at the heart of Calgary Stampede — hundreds of breakfasts pop up around the city and are flooded with cow-folk. If you want to avoid the crowds this year, here are three locally made pancake mixes to get you started in the comfort of your very own abode.

Buttermilk Fine Waffles Pancake and Waffle Mix

Buttermilk Fine Waffles was opened in 2015, using a family recipe as the base for the waffles. Today, the mixes are available at grocery stores and food vendors around the city. The original mix can be turned into both pancakes and waffles. They also sell an easy “just add water” version for camping.

Lannie Rae Gourmet Pancake Mix

Operating out of Cochrane, Lannie Rae Gourmet is a business that has created a pancake mix empire. With more than 20 varieties of pancake and waffle mix available, Lannie Rae of course sells original, along with flavours like butter pecan, pistachio fig, pina colada, Okanagan peach and more. There are also a few gluten-free options. Lannie Rae Gourmet pancake mixes can be picked up from Cochrane or one of the many stockists — they also offer delivery to Calgary and the surrounding area.

Torill’s Table Healthy Pancake Mix

Inspired by owner Torill Myre’s mother’s Norwegian recipes, this pancake mix is made right here in Calgary and shipped around the country. Torill’s Table mix will make either pancakes or waffles, and is made with good-for-you ingredients added, like oat and whole wheat flour, flaxseed and almond flour. There is also a gluten-free version that can be found at most major grocery stores and health food stores — the full list of vendors can be found here.
