Haven’t we all stared down at the veggies on our plate and wished they were a slice of bread or, a piece of cake. The realization that our parents were right when they wouldn’t let us leave the table until we ate our vegetables is a profoundly mature moment.

But, what if we one-upped the decades-old “Eat your vegetables” threat to “Drink your vegetables”?

Green juices, as they are commonly referred to, have become a sensation in the nutrition world. Go on any health-conscious, vegan or even beauty blog and you’ll find a mention of the many benefits of green juices and smoothies:

  • They are a great way to get vitamins, minerals and enzymes without having to make a salad.
  • Through green juices, your body is soaked in nutrients. “It’s like injecting goodness straight into your blood stream,” according to one blog.
  • Green smoothies retain the fibre found in fruits and vegetables but make it easier to digest.
  • They can help reduce inflammation, increase energy levels, soothe your digestive system, improve your skin and help with weight loss.

Featuring mostly kale, spinach, celery, cucumber and broccoli, they always (trust me) taste better than they look – just remember to add a touch of sweetness or spice. So dig out your blender or juicer, and let the glowing from the inside out begin.

Simple Green Juice

2 apples

+

3 cups kale

+

1 cup spinach

+

1 carrot

+

long cucumber

+

blueberries or 2 inch, peeled ginger

Cut ingredients into pieces small enough to put in your juicer. Juice, stir then pour over ice.
