Pandas, Charcoal, and a Classic Cocktail

“Pandaring to the Crowd” is YAKIMA Social Kitchen + Bar’s timely new cocktail.

The talk of the town has been the arrival of our new international guests, the four pandas whose Calgary Zoo exhibit opened this May. The YAKIMA Social Kitchen + Bar team watched as these majestic creatures were unloaded from their cargo plane, and it can’t wait to greet them in person. To celebrate and welcome the pandas in style, YAKIMA came up with a specialty cocktail.

Just as the pandas have captured the imagination of Calgarians, charcoal has found its way into some of our favorite trendy cocktails. The use of charcoal has moved beyond the usual wellness products into culinary and mixology applications. But before you go rummaging through your grill’s ashes, be aware that activated charcoal is more complex. Most food-grade charcoal powders are often made from wood or coconut husks that are exposed to gases at high temperatures.

The creative mixologist team at YAKIMA Social Kitchen + Bar prides itself on creating inspired classics. With this in mind, the team decided to re-invent crowd-pleasing classic the whiskey sour. The new creation manages to incorporate three of Calgary’s biggest trends: pandas, activated charcoal and classic cocktails, making this YYC libation a must-try for locals and visitors.  

Baiju, a liquor from China, was used as a base to replace the traditional bourbon. Whiskey sour connoisseurs will recognize the staples of the drink as lime juice and egg whites. Activated charcoal was used to garnish the cocktail with a distinctive panda-like marking.

Be sure to stop in for this trendy cocktail as well as several others, including the smoked old fashioned.

  • 1 1/3 oz. Baiju
  • 2/3 oz. Cointreau
  • 1 oz. orgeat
  • 1 oz. lime juice
  • 1 oz. egg whites
  • 1 dash orange bitters
  • 1 dash angostura bitters
  • Activated charcoal
